A colleague of mine who is from india just went back to india cos he has finished the project that brought him ti nigeria. so after he left his driver came with some boxes containing the things he had left in his house. his driver handed them to me. some of the items were food which has expired but because of sapa i decided to cook it. pls what are the side effect of eating such foods?

Just go on item by item basis. For each, google to see if it is safe to eat after 1 year expiration.
Example, can spaghetti be eaten one year after expiration date?
Do same for all items.

Meaning, the date until which a foodstuff retains its specific properties, e.g. taste, aroma, appearance, any specific qualities which relate to the product, vitamin content, etc

It doesn't necessarily mean it's bad or it will kill you.
